Wild Boar Stew with chestnuts and apples


  • 600g wild boar goulash
  • 3 garlic cloves
  • 50g of ginger
  • 120g shallots
  • 4 tablespoons of oil
  • Salt Pepper
  • 250ml withe wine
  • 200ml wild fond (game stock)
  • 300g apples
  • 250g chestnuts


Wash the wild boar meat and pat dry. Peel the shallots, garlic and ginger and dice them very finely. Heat 2 tbsp of oil in a pan and sauté the meat in portions remove from pan. Add 2 tbsp of oil and simmer the garlic, ginger and shallots add meat, salt and pepper. Add wine and game stock and let it cook for about an hour, then peel and dice the apple. Add chestnuts and apple. If necessary, top up with white wine ans stock Cook for another 20 minutes, and you´ll have an amazing wild boar goulash.
